Native Grains

We have embarked on an ambitious project to completely replace highly polished grains (such as white rice) from our menu. We have designed new recipes using native varieties such as black rice, brown rice, kodo millet, sorghum millet, riceberry rice, etc. The benefits are manifold:

  1. Native varieties of grains are much less resource intensive in terms of production. They are better for the ecological health of the soil.
  2. Native grains varieties have much higher health benefits.
  3. Highly polished varieties are low on nutrients and hard on the digestive system.
